Our raspberries and blackberries are ready for picking, the blueberries still have awhile to go. Here is a great summer recipe for these colorful fruit!
Quick Any-Fruit Cobbler (from my friend Rusty)
1 stick butter or margarine
1 c. self-rising flour (or 1 c. flour + 1 t. baking powder + 1/4 t. salt)
1 c. sugar
1 c. milk
2 c. fruit
Heat oven to 350°. Melt butter in glass 8" x 10" or 9" x 9" pan, or a 2-quart casserole. Mix flour, sugar and milk until lumps are gone. Pour batter into butter. Place fruit on top. Bake 35 to 40 minutes. Makes 9 servings.
(Rusty's likes using: 1 c. blueberries + 1 Granny Smith apple, chopped, and tossed the fruit with a little lemon juice before putting it in the batter).
